Ingredients

1 1/2 slices multi-grain bread
1/2 cup dill leaves
85g low-fat feta cheese crumbled
Olive oil cooking spray
1/2 cup flat leaf parsley leaves
Small lemon rind finely grated
2 teaspoons natural yoghurt
250g Caesar salad kit to serve
4 x 250g Barramundi fillets skin removed

Instructions

1. Preheat oven to 180% c
2. Combine bread, feta, herbs, lemon rind, yoghurt, salt and pepper
3. Process 30 seconds or until crumbs form
3. Season fish with pepper and salt
4. Press crumb mixture onto top of each fillet
5. Heat fry pan over medium-high heat, spray with oil
6. Cook fish crumb side down for 1 minute
7. Turn cook for a further minute Place on a baking tray crumb side up
8. Bake 10- 12 minutes until just cooked through
9. Prepare salad kit to serve with fish
