Juice of 1 lemon
1/2 cup virgin olive oil
Sea salt and freshly ground black pepper
3 cloves garlic finely sliced
Sprig of fresh mint leaves roughly chopped
Sprig fresh oregano leaves roughly chopped
4 x 1cm thick swordfish steaks


1. Squeeze lemon juice into a bowl add 3 times the amount of olive oil
2. Season with salt and pepper and stir in the garlic, mint and oregano
3. Heat fry pan until very hot
4. Season fish with pepper and salt cook 1 minute each side until golden
5. This will leave fish slightly pink in the middle, cook a little more if preferred
6. Divide fish between serving plates and spoon over sauce
