1 garlic clove finely diced
1 long red chilli deseeded finely chopped
2 tablespoons finely chopped parsley
300g sashimi grade fresh Tuna thinly sliced
Thinly sliced radish to garnish
Sesame seeds optional
Citrus Soy Dressing
Juice of 1 lime
Juice of 1 lemon
Juice of 1 grapefruit
1/4 teaspoon finely chopped fresh ginger
1 Ā½ tablespoons soy sauce
2 drops of sesame oil
1/2 teaspoon mustard powder
1/4 cup rice wine vinegar
1/4 cup peanut oil


To make dressing
1. Whisk all ingredients together in a jug combine well
2. Drizzle a little of the dressing over serving platesĀ 
3. Top with half the garlic, chilli and parsley
4. Arrange tuna over top and drizzle with a little dressing
5. Sprinkle with remaining garlic, chilli and parsley
6. Drizzle remaining dressing and garnish with radish
