Ingredients

4 prepared trout
6 tablespoons Bottle Green Ginger and Lemongrass Cordial
25g piece root ginger
1 large red chilli
1 lemon
2 spring onions

Instructions 

1. Pour Green Ginger and Lemongrass Cordial in a pan
2. Add 6 tablespoons of water
3. Peel and finely slice ginger
4. De-seed and cut the chilli into thin slices 
5. Add a good squeeze of lemon juice, bring to a boil 
6. Simmer until reduced to a slightly thickened glaze
7. Barbecue or grill fish for approximately 15-20 minutes
8. Depending on size, turn half way through cooking 
9. Fish will flake easily when cooked
10. Cut spring onion into thin strips, add to the warm glaze 
11. Serve spooned over the fish
