1 x whole salmon
3 tablespoons olive oil
2 large garlic cloves, minced
2 teaspoons finely grated lemon zest
2 tablespoons lemon juice
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1/2 teaspoon coriander seeds
1/4 teaspoon cayenne pepper
Salt and freshly ground black pepper to taste


1. Preheat oven to 200%C Line a large baking sheet with baking paper
2. Rinse salmon with cold water and pat dry
3. With a sharp knife or kitchen scissors, trim off the fins and tail and discard
4. Make several 1/2-inch deep slits on one side of the fish
5. Place salmon, cut side up, on the prepared baking sheet
6. Mix oil, garlic, zest and juice, cumin, paprika, coriander and cayenne in a bowl
7. Brush some mixture into cavity of the fish, brush remaining mixture over fish 
8. Season with salt and pepper. Roast 35-40 minutes, or until cooked through 
9. Transfer the salmon to a platter. Spoon the pan juices over the fish and serve
