1 Ocean Trout
Flour for coating     
60g butter
lemon juice                    
Flaked almonds                         
Finely chopped fresh parsley
Salt & freshly ground black pepper        


1. Wash trout and pat dry with paper towel, open trout out skin side up
2. Using rolling pin run along backbone starting from tail, pressing gently down
3. Turn trout over, using scissors cut through backbone at each end of fish
4. Lever backbone out, checking for any remaining bones and trim fins
5. Coat fish with flour. In a large frying pan heat 30g of butter add fish
6. Cook 4 minutes each side or until golden, remove and cover with foil
7. Heat remaining butter add almonds, stir until almonds are a light golden brown
8. Add lemon juice, parsley, salt and pepper, stir until sauce is heated through
9. Pour over trout and serve
