Ingredients

4 whiting fillets 
1/4 cup lemon juice 
seasonings to taste 

Corn salsa 
1 tablespoon oil 
1 small onion, finely chopped 
300g can corn kernels, drained 
150g green beans, sliced 
1 small red chili, seeded finely sliced 
114 cup coriander leaves 

Instructions 

1. Line a baking tray with baking paper
2. Place fish fillets on tray. Drizzle with juice. Sprinkle with seasonings
3. Bake in hot oven 200%C 10-15 minutes until flesh flakes when tested with fork

Prepare salsa
1. Heat oil in a frying pan. Sauté onion until tender
2. Add corn, beans and chili. Cook, stirring 3 minutes or until beans are tender
3. Stir through coriander. Serve fish with corn salsa and salad
