500g fresh white fish fillets 
3 tablespoons fresh lemon juice 
1/3 cup natural yoghurt 
3 tablespoons apricot jam 


1. Place lemon juice in a baking dish with fish
2. Bake at 180%C uncovered for 5 minutes then drain 
3. Combine remaining ingredients and spoon over fish
4. Return to oven for 3 minutes or until cooked
