Ingredients

5 Balmain Bugs cooked and halved lengthways
2 trimmed and washed baby cos leaves
2 mangoes cheeks removed, peeled and chopped
2 red capsicums roasted skin, seeds removed and sliced
1 red onion finely sliced
Dressing
1/3 cup olive oil
1/3 cup white wine vinegar
1 tablespoon chopped capers
2 teaspoons chopped dill

Instructions

1. Remove flesh from bug tails
2. Place in a large bowl with cos leaves, mangoes, capsicum and onion
3. In a jug whisk all dressing ingredients together, season to taste
4. Drizzle dressing over salad just before serving and toss gently
