2 1/2cm gingerroot, peeled and finely chopped
2 garlic cloves, crushed
1 lemon, juice of, only
2 spring onions, chopped
1 red chilli de seeded and finely chopped
2 tablespoons olive oil
4 swordfish steaks


1. Place ginger and garlic in a small bowl mix to form a paste
2. Add lemon juice, spring onions, chili and oil, then mix again
3. Add swordfish and coat well with the mixture
4. Leave to marinate for 15 minutes. Preheat grill to high
5. Remove fish from marinade, place on grill rack
6. Grill for 5-6 minutes, turning once
7. Drizzle with remaining marinade
8. Serve with new potatoes, lime wedges and mixed salad
