1/2 stick lemon grass, finely chopped
1/4 teaspoon Chilli Flakes
2 tablespoons Chives
2 tablespoons lime juice
1 red pepper, finely sliced
4 Monkfish fillets
1 tablespoon Thai fish sauce
150 ml coconut milk


1. Preheat the oven to 200°C, 400°F
2. Combine coconut milk, fish sauce, lemon grass, chillies, Chives, lime juice 
3. Take 4 pieces of grease proof paper or a banana leaf
4. Scatter the pepper slices evenly between them
5. Place Monkfish on top spoon 4 tablespoons of coconut mix over each fillet
6. Fold paper or leaf into a  tight parcel secure with a cocktail stick if necessary
7. Place on baking tray cook in oven 12-14 minutes until fish is cooked through
Serve immediately with Thai jasmine rice
