500g fresh Monkfish fillets
1 1/2 cups buttery crackers (crushed)
1 teaspoon garlic salt
1 1/4 teaspoon old bay seasoning (divided)
1 egg
1/2 cup water (or milk)
salt and pepper (to taste)
Oil (for frying)


1. Heat oil in a deep fryer to 350 degrees 
2. In a shallow dish combine crackers and garlic salt
3. Add 1 teaspoon of old bay seasoning
4. In a bowl mix egg, water remaining old bay seasoning salt and pepper to taste
5. Coat each fish fillet in the egg mixture then into the cracker mixture coat well 
6. Press down so the crackers stick. Repeat until all the fillets are coated
7. Deep fry in batches at 350 degrees 2-3 minutes or until golden and crispy 
8. Drain on paper towel
