Ingredients

200g Mighty Spice Thai Green Spice Mix 
4 x 200g Monkfish tail fillets sliced into small pieces
1 small mango, sliced into strips
1 red chilli, de seeded and chopped
2 little gem lettuces, ripped
25g pack coriander, roughly chopped
Zest and juice of 1 lime
2 tablespoons olive oil 

Instructions 

1. Marinade the Monkfish in Thai Green Spice Mix 
2. Marinate a minimum of 20 minutes or up to an hour
3. Mix the mango, chilli, lettuce and coriander together in a large bowl
4. Heat 1 tablespoon of oil in a large fry pan 
5. Fry Monkfish 2 minutes each side until golden or just cooked through

Dressing 
1. Whisk the remaining oil with the lime zest and juice
2. Add salt and pepper to taste
3. Toss mango, chilli, lettuce and coriander into the dressing
4. Serve Monkfish on top of the fresh salad

Thai spice mix
2 teaspoons paprika
1 teaspoon turmeric
1 teaspoon coarsely ground black pepper
1 teaspoon ground coriander
1 teaspoon ground fenugreek
1/2 teaspoon dry mustard
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1/8-1/4 teaspoon cayenne powder (to taste)
Combine well and store in an airtight container
