Monkfish or any firm fillet
1 Orange, lemon and lime slice per fillet
Olive Oil
Chopped Herbs
Pancetta or bacon slices


1. Place each fillet in foil
2. Drizzle with olive oil and herbs  
3. Place a slice of lemon, lime and orange on top of fillet
4. Wrap bacon or pancetta slice around each fillet 
5. Close tin foil up and bake for 10-20 mins until cooked
6. Drizzle citrus sauce in tin foil over fish once plated up
7. Great served with mashed potato and salad
