Ingredients

400 grams Monkfish tail
2 sprigs fresh thyme
12 rashers rind less smoked, streaky bacon
250 grams asparagus
Salt and pepper to taste
For the sauce:
1/2 cup Mayonnaise
1 tablespoon butter
Lemon juice, to taste
Salt and pepper to taste

Instructions 

1. Cut the Monkfish into two portions
2. Sprinkle portions with thyme and season according to taste 
3. Lay portions on top of each other in a pan 
4. Arrange so the thin end of one fillet is opposite the thick end of the other
5. Heat the grill for 3-5 minutes
6. Wrap the bacon around the Monkfish
7. Place Monkfish under the grill with the bacon joins on the underside 
8. Grill 7-10 minutes until the bacon starts to turn crispy
9. Turn and cook on the other side for another 7-10 minutes

Sauce
1. Add all ingredients in a bowl mix thoroughly and set aside
2. When the Monkfish is cooked leave it to stand for 5 minutes
3. Meanwhile, steam asparagus for 3-5 minutes
4. Drizzle sauce over the fish and serve with asparagus
