1.125g Marlin Steaks
1 cup light soy sauce
1 cup Mirin
2 tablespoons white sugar
2 tablespoons corn flour
Juice of one lime


1. Trim Marlin Steaks, remove any skin 
2. Cut fish into one inch cubes, Set aside   
3. Soak 16 – 20 bamboo skewers in water, Soaking prevents burning
4. Whisk together in a saucepan soy sauce, Mirin, sugar, corn flour, lime juice
5. Bring to the boil and remove immediately, Let cool completely  
6. Add half of teriyaki sauce to the bowl of fish
7. Cover and marinate in the refrigerator for about a half an hour
8. Place fish cubes on 10″ bamboo skewers, 4 – 5 cubes at a time
9. Grill on barbecue or indoor grill about 3-4 minutes per side    
10. Brush with remaining teriyaki sauce and serve with lime wedges
11. Makes 16 skewers
