Ingredients

2-4 Marlin Steaks
1/2 cup of sugar or maple syrup
1/4 cup soy sauce
5 dashes of balsamic vinegar
5 dashes Worcestershire sauce
2 tbsp. vegetable oil
1 tbsp. sesame oil
1 tablespoon fennel
1 tablespoon minced ginger
1 tablespoon minced garlic
1 tablespoon chopped parsley
1 tablespoon basil or coriander
1 pinch of chili flakes, more if you prefer it spicy

Instructions 

1. Marinate Marlin steaks at least 2-5 hours, the longer the better
2. Remove fish from marinade
3. Heat non-stick pan on low-medium
4. Sear fish on all sides
5. Take your time to achieve a nice golden mahogany colour
6. Baste fish with some of the remaining marinade
7. Transfer to an oven proof dish
8. Place in a 400°F oven 5-10 minutes, while basting with marinade
9. Slice steaks into medallions and serve over rice or noodles
