1 pink grapefruit
2 teaspoons grapefruit zest
2 cups grapefruit juice
Grapefruit sections for garnish
1 cup of water
Salt and pepper to taste
4 x 185g Marlin steaks

5 tablespoons butter
2 tablespoons minced chives


1. Prepare grapefruit by grating of zest from the outer peel
2. Peel the grapefruit and separate it into sections
3. Stir together grapefruit juice and water in a skillet
4. Add salt and pepper to taste
5. Place skillet on a stove cover and bring the liquid to a boil
6. Turn heat to medium low add steaks to the skillet
7. Cover and let the ingredients simmer for one minute 
8. Remove from heat, allow to sit the cover on, for six minutes
9. Pour about 2/3 of the liquid to another skillet and bring to a boil 
10. Boil over high heat until its texture is thick and syrupy
11. Remove skillet from its heat source
12. Add grapefruit zest and whisk in butter tablespoon at a time
13. Stir in minced chives
14. Place Marlin steaks on a serving platter
15. Cover with grapefruit sauce and add the grapefruit sections as a garnish
