4 marlin steaks
4 garlic cloves, minced
4 tablespoons olive oil
1/2 lime, juice of
1 lime, juice of
1 1/2 tablespoons soy sauce
1 green onion, chopped
1/2 mango, chopped
1/4 teaspoon salt
1/2 red or green pepper or chopped
1/4 red onion, chopped
1-2 teaspoons fresh parsley minced


1. Rub fish with garlic and leave to infuse
2. Combine olive oil, juice of 1/2 lime, soy sauce and green onion
3. Add fish and marinate about 1 hour
4. Combine in a bowl remaining juice, mango, red onion and salt 
5. Add chopped pepper and parsley and chill 
6. Grill steaks over medium heat about 7-8 minutes per side
7. Top with fruit salsa and serve
