2 table spoons fresh green pepper coms
9Oml (6 table spoons) lemon juice
60ml (4 table spoons) olive oil
Freshly ground sea salt
4 swordfish steaks
1 egg
1 clove garlic, roughly chopped
140 ml oil
2 sprigs fresh oregano leaves, finely chopped
Salt and freshly ground black pepper


1. Crush green peppercorns lightly using a pestle and mortar
2. Mix together the lemon juice, olive oil and salt
3. Place swordfish steaks in a shallow ovenproof dish
4. Pour the lemon and oil mixture over each steak
5. Refrigerate overnight, turning occasionally until the fish becomes opaque
6. Using a blender or food processor, mix together the egg and garlic
7. With blender running, gradually add oil in a thin steady stream 
8. Continue to blend until the sauce is thick
9. Preheat grill to hot, arrange swordfish on grill pan
10. Sprinkle over oregano and season well
11. Cook 10-15 minutes under a preheated hot grill
12. Turning frequently and basting with lemon and pepper marinade
13. When steaks are cooked, place on a serving dish and spoon garlic mayonnaise over to serve
