Ingredients

250g Mahi Mahi steaks
3 spring onions, thinly sliced
2 garlic cloves, crushed with the side of a chef’s knife and roughly chopped
2 tablespoon soy sauce
1 tablespoon canola oil
1 tablespoon lemon juice
1/2 tablespoon mirin
1/2 tablespoon rice vinegar
1/2 – 1 tsp grated ginger (depending on your love of ginger)

 Instructions

1. Combine all ingredients above, add Mahi Mahi steaks
2. Allow to marinate at room temperature for 20-30 minutes
3. Heat a saute pan over medium high heat. Add 1/2 tsp canola oil 
4. Remove steaks from marinade and place in pan
5. Cook for 4 minutes covered, turn steaks and cook 2-3 minutes longer
6. Serve immediately

An optional step if you want a sauce
1. Remove fish from the pan and set aside on a plate and cover with foil 
2. Add marinade to pan let boil, reduce until thick enough to coat back of a spoon
3. Drizzle over the cooked fish and serve immediately
