3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1 teaspoon grated fresh ginger root
1 clove garlic, crushed or to taste
2 teaspoons olive oil
4 x 185g Mahi Mahi steaks
salt and pepper to taste
1 tablespoon vegetable oil


1. Combine in a shallow glass dish honey, soy, vinegar, ginger, garlic, olive oil
2. Season fish with salt and pepper
3. Place in dish skin side down cover refrigerate 20 min to marinate
4. Heat vegetable oil in a large skillet over medium-high heat
5. Remove fish from the dish, and reserve marinade
6. Fry fish 4 to 6 minutes each side, turning once until flakes easily with a fork
7. Remove fish to a serving platter and keep warm
8. Pour reserved marinade into the skillet
9. Heat over medium heat until the mixture reduces to a glaze consistently
10. Spoon glaze over fish, and serve immediately
