2 kg skinned, deboned Mahi Mahi, cut into chunks
3/4 cup minced garlic
1/2 cup butter, diced
1 large onion, diced
1 1/2 lemons, juiced
1/2 cup dry white wine
1 1/2 (320g) cans Delmonte diced tomatoes with green chili peppers
salt and pepper to taste
250g shredded pepper jack cheese (Aussie jack)


1. Preheat grill to high heat
2. Place fish in a foil baking tray, toss with garlic to coat
3. Distribute butter evenly throughout tray
4. Spread onions over fish
5. Pour juice, wine, tomatoes with chilli over fish season with salt and pepper
6. Tightly cover tray with foil
7. Place tray on grill plate, cook 35 minutes or until easily flaked with a fork
8. Sprinkle with cheese before serving
