Ingredients

Spray oil
8 uncooked Balmain bugs, heads removed
60g butter, melted
2 tablespoons lime juice
2 cloves garlic, crushed
1 teaspoon finely grated lime rind, and lime wedges

Instructions

1. Spray a barbecue or char-grill with oil. Preheat on high
2. Slice bugs in half length ways
3. Carefully remove centre vein from tail, using the point of a knife
4. In a small jug, whisk together butter, juice, garlic and lime rind
5. Brush bugs with butter mixture and season to taste
6. Barbecue 3-5 minutes each side until golden and cooked through
7. Serve bugs with lime wedges
