200g softened butter
¼ cup finely chopped fresh parsley
Finely grated zest of 1 lemon
3 garlic cloves grated
½ teaspoon dried chilli flakes (optional)
5 small cooked lobsters halved lengthways and cleaned


1. Combine butter, parsley, zest, garlic and chilli
2. Add half a teaspoon ground white pepper mix well
3. Transfer to a sheet of plastic wrap roll into a log twisting ends to secure
4. chill until required, preheat oven to 180% C (160% C fan forced)
5. Line a baking tray with baking paper, place tails shell side down on the tray
6. Fill shells with lobster meat, slice chilled butter and place over lobster meat
7. Bake in the oven for 6 – 8 minutes or until butter is just melted
8. Serve with lemon wedges
