500g firm fish fillets cut into pieces
2 tablespoons oil
2 teaspoons minced
1/2 red capsicum (seeds removed and cut into strips)
1/2 yellow or green capsicum (seeded and cut into strips)
200g snow peas
1 teaspoon cornflour
3 tablespoons premium Oyster sauce
1 tablespoon premium soy sauce
1 teaspoon sesame oil
3 tablespoons water


1. Heat pan or wok over medium-high heat
2. Add oil cook fish until golden brown about 5-6 minutes. Remove and set aside
3. Add ginger, capsicum and snow peas
4. Stir fry until vegetables are tender and crisp about 2-3 minutes
5. Combine cornflour with oyster sauce, soy sauce, sesame oil and water
6. Add to pan and cook 2-3 minutes
7. Add fish and cook stirring until heated through, serve immediately
