2 spring onions
Fresh ginger, about 2 tablespoons julienned
1 small bunch of coriander
1 1/2 tablespoons soy sauce
1/8 teaspoon salt
1/8 teaspoon sugar
2 tablespoons water
1 medium fresh white fillet (Ling or Orange Roughy)
2 tablespoons oil



1. Julienne spring onion and ginger set aside, chop coriander roughly set aside  
2. Combine the soy sauce, salt, sugar and water into a small bowl and mix well
3. Prepare steamer 
4. Cover and steam for about 10 minutes
5. Turn off heat, remove fish from steamer, transfer the fish to a serving plate
6. Spread coriander, a third of spring onion (green portions) onto steamed fish
7. Heat small saucepan to medium-high heat, add 2 tablespoons of canola oil
8. Add ginger allow to brown lightly, about 1 minute, add rest of the onions
9. The mixture should be giving a good sizzle, add soy mixture keep heat on high
10. Cook until the spring onions are wilted – about 30 seconds
11. Remove from heat and spoon the entire mixture over the fish
12. Serve immediately
