3/4 cup orange or mandarin juice
1 tablespoon hoisin sauce
1 clove garlic
2 teaspoons lime and chilli sauce
500g Gemfish fillets (skin and bones removed)
3 teaspoons cornflour mixed with 1/2 teaspoon sugar and 2 teaspoons cold water
Orange or mandarin slices sprinkled with sugar


1. Combine juice, hoisin sauce, garlic and lime and chilli sauce in a bowl
2. Add fish turning to coat and cover and marinate at least 1 hour
3. Drain fish and reserve marinade
4. Barbecue or grill fish in a pan brushed with oil
5. Cook 3 minutes each side until cooked through
6. Basting with reserved marinade during cooking
7. Combine reserved marinade and cornflour mix in a saucepan
8. Cook stirring over low heat until mixture boils and thickens
9. Serve fish with orange slices and sauce spooned over
