1/2 cup macadamia nuts
1/2 cup dried breadcrumbs
1 tablespoon parsley, roughly chopped
1 tablespoon chives, chopped
4 tablespoons butter, softened
4 x 170g barramundi fillets, skin removed
1 tablespoon olive oil


1. Preheat oven to 200⁰C
2. Combine all ingredients for the crust in a food processor
3. Pulse until a rough crust forms, macadamia nuts should be quite chunky
4. Season to taste with salt and pepper and reserve
5. Heat a large non-stick pan over medium high heat add olive oil to the pan
6. Season fillets both sides with salt and pepper place in pan flesh side down
7. Cook for 1 to 2 minutes or until light golden brown
8. Using a thin flat spatula gently flip fish over
9. Divide crust evenly among the top of each fish portion in an even layer
10. Transfer entire pan to the oven
11. Bake 4-5 minutes until fish just cooked through and crust light golden brown
12. Remove fish from oven and serve immediately
13. Serve with either a light salad or sautéed vegetables
