4 Barramundi portions
1/2 clove garlic finely chopped
Salt & black pepper to taste
Green salad leaves
Vegetable oil for cooking
4 tablespoons olive oil
1/2 cup basil leaves finely chopped
2 tablespoons white wine vinegar or lemon juice


1. Combine basil, garlic, vinegar and olive oil in a small bowl and set aside
2. Pan - fry or grill fish on medium - high heat 2-3 minutes each side
3. Serve fish with basil vinaigrette and green salad
