4 Barra fillets
3-4 shallots sliced
1 teaspoon sesame oil
4 tablespoons soy sauce
Steamed long grain white rice
1-2 red chilli finely sliced
5cm piece ginger cut into fine matchsticks
2 bunches bok choy washed and quartered
3 tablespoons Chinese rice (Shaoxing) wine or dry sherry


1. Place fish portions on a plate and top with ginger
2. Pour soy sauce, rice wine and sesame oil over fish
3. Place plate in a steamer and steam fish until just cooked
4. Remove fish from plate and reserve sauce
5. Cook bok choy 2-3 minutes in fry pan with some water, drain and set aside
6. Serve fish on bok choy and top with shallots, chilli.
7. Spoon sauce over fish and serve with rice
