Ingredients

4 plate size snapper cleaned and scaled
1 bunch of coriander chopped
4 cloves garlic crushed
1 tablespoon chopped ginger
1 tablespoon brown sugar
2 chopped chillies
1/4 cup lime or lemon juice
2 tablespoons fish sauce

Instructions

1. Dry fish with kitchen paper, score in several places with a sharp knife
2. Place into a foil lined baking dish
3. Combine all remaining ingredients and spoon over fish
4. Bake in a moderate oven 180%C
5. Bake for 15 to 20 minutes or until fish flakes with a fork
