2 teaspoons olive oil
1/2 a finely chopped red onion
2 crushed garlic cloves
400g can diced tomatoes
1/4 cup finely shredded fresh basil
1 teaspoon balsamic vinegar


1. Heat oil on medium heat in a medium saucepan
2. Saute onion and garlic 4-5 minutes until softened
3. Add tomato stirring 4-5 minutes until slightly thickened
4. Cool slightly, process with basil and balsamic vinegar until smooth
5. Season to taste, transfer to a serving bowl
6. Cover with plastic wrap and chill until required
