2 eggs
1 teaspoon Dijon mustard
Pinch salt
1/2 cup grapeseed oil
1/4 cup olive oil
2 gherkins finely chopped
1 1/2 tablespoons chopped capers
2 tablespoons fresh chopped continental parsley
1 shallot finely chopped
1 tablespoon fresh lemon juice


1. Whisk egg yolks, mustard and salt in a bowl to combine
2. Combine grapeseed and olive oil in a jug
3. Whisk a few drops into egg mixture until well combined
4. Continue adding oil mixture 1 drop at a time until mixture starts to thicken
5. Then add a steady stream until mixture is thick
6. Stir in gherkins, capers, parsley, shallots and lemon juice mix well
7. Place in refrigerator for an hour to develop the flavours
