Ingredients

2kg mussels cleaned and de bearded
1 medium onion finely chopped
3 garlic cloves crushed
2 tablespoons red curry paste
2 tablespoons fish sauce or oyster sauce
1 tablespoon brown sugar
400ml can coconut milk
1/2 cup coriander or basil leaves
1 fresh red chilli finely chopped

Instructions

1. Heat vegetable oil in a pan add onion and garlic
2. Cook on medium heat 1-2 minutes to soften
3. Add curry paste and fry for 1/2 a minute to release flavour
4. Add coconut milk brown sugar, fish sauce stir well
5. Add mussels and bring to the boil
6. Cook mussels for 2-3 minutes until mussels open
7. Sprinkle mussels with chillies and coriander, serve with steamed rice
