1 tablespoon olive oil
1 large onion finely chopped
3 garlic cloves chopped
150ml dry white wine
400g can chopped tomatoes
1 bay leaf
1 teaspoon dried chilli flakes
24 mussels washed and de bearded
2 tablespoons chopped flat leaf parsley
Salt and freshly ground black pepper to taste


1. Heat oil in a large pan over medium heat, add onion and garlic
2. Fry gently for about 5 minutes
3. Add the white wine and let it sizzle
4. Add tomato, bay leaf, chilli and salt and pepper
5. Let it bubble then turn down heat and gently simmer about 10 minutes
6. Turn heat back up add mussels cover  
7. Leave to boil about 5 minutes until shells open discard unopened mussels
8. Serve in warmed bowls and sprinkle with parsley to garnish
