1 cup fish stock or water
750g fresh mussel scrubbed and de bearded
1/2 cup olive oil
Finely grated zest and juice of 1 lemon
1 tablespoon red wine vinegar
1 tablespoon snipped chives
1 clove crushed garlic
1 teaspoon seeded mustard
2 teaspoons sugar


1. To make dressing whisk all ingredients together and season to taste
2. In a large saucepan bring stock to the boil on high and add mussels
3. Cook covered 2-3 minutes shaking occasionally until mussels open
4. Remove top shell from each mussel and discard
5. Arrange mussels on a serving plate and spoon over dressing
