Ingredients

1 tablespoon olive oil
1 red onion thinly sliced
2 garlic cloves thinly sliced
1 cup white wine
400g can diced tomatoes
1 teaspoon chili flakes
1kg mussels cleaned and de bearded
1/2 cup thickened cream
2 tablespoons chopped parsley
crusty bread to serve

Instructions

1. In a  large saucepan heat oil on high
2. Saute onion and garlic 2-3 minutes until tender 
3. Stir in wine and  bring to the boil on high heat
4. Reduce heat to low simmer 3 minutes until reduced by half
5. Stir in tomatoes and chili
6. Bring back to the boil, add mussels and simmer covered
7. Simmer for 2-3 minutes until mussels open  
8. Stir cream and half parsley through, simmer 1-2 minutes 
9. Serve topped with remaining parsley, accompany with crusty bread
