Ingredients

4 x150g snapper fillets
100g soft butter
1 small garlic clove crushed
2 tablespoons finely sliced shallots
3 drops tabasco sauce
1 lemon juice and zest

Instructions

1. Combine butter, garlic, shallots and tabasco in a bowl
2. Stir in lemon juice and zest
3. Spoon mixture into a log shape about 3cm in diameter
4. On a sheet of greaseproof paper and roll up in paper
5. Wrap in foil and refrigerate until firm
6. Cook fish in a heated greased fry pan
7. Remove butter mixture from fridge unwrap and cut into 1cm slices
8. Serve fish topped with butter
