1 tablespoon olive oil
4 x 150g snapper fillets skin on bones removed
Green beans and roasted truss cherry tomatoes to serve
Fresh basil to garnish
Creamy Basil sauce
2 shallots, thinly sliced
1/2 cup white wine
2 egg yolks
150g cold butter, cubed
2 tablespoon thickened cream
1 tablespoon lemon juice
1 cup chopped fresh basil leaves
Salt and pepper, to taste


To make creamy basil sauce
1. Place shallots and wine in a small saucepan
2. Bring to the boil
3. Boil about 10 to 15 minutes until reduced to 2 tablespoons
4. Strain and return to same saucepan
5. Place saucepan over a low heat
6. Whisk in yolks
7. Add butter, one cube at a time, whisking until combined
8. Whisk in cream, juice and basil and remove from heat. Season with salt and pepper
9. Heat oil in a non-stick frying pan, add fish, skin-side down and cook 3 to 5 minutes each side until cooked
10. Transfer fish to four heatproof serving plates and pour over sauce, cook under hot grill 1 to 2 minutes until golden brown
11. Serve with beans and tomatoes and garnish with basil
