4 large snapper fillets
1/4 cup ginger strips
6 green shallots shredded
1/2 cup coriander leaves
1/4 cup soy sauce
2 tablespoons vegetable oil
2 limes to serve


1. Bring a large wok or Pan of water to the boil
2. Season fish to taste
3. Place half the ginger in a lined bamboo steamer basket
4. Top with fish and remaining ginger and cover
5. Place steamer over simmering water and steam 5-6 minutes
6. Sprinkle fish with half onion and coriander
7. Continue to steam a further 5-6 minutes until cooked
8. Heat soy and oil together in a small saucepan over medium heat
9. Stir for 1- 2 minutes
10. Transfer fish to serving plates
11. Drizzle with soy mixture and sprinkle with remaining onion and coriander
