Ingredients

6 slices of prosciutto halved lengthways
500g fresh ricotta
1 beaten egg
2 tablespoons chopped dill
1 tablespoon finely grated lemon zest
12 medium cooked prawns
Sliced red chilli

Instructions

1. Preheat oven to 200% C and line a 12 muffin tray with prosciutto
2. In a bowl combine ricotta, egg, dill and lemon zest season to taste
3. Spoon mixture in muffin recesses, bake 12-15 minutes until meat crisp
4. Cool top with prawns halved length ways and chilli, sprinkle with dill
