500g fish fillets (boned cut into 5cm strips)
12 Sardines (heads and bones removed)
8 Raw medium prawns (shelled)
8 Scallops cleaned and deveined
1 Calamari hood, cut into rings)
Flour for coating and oil for frying
Lemon wedges and tartare sauce to serve
1 cup self -raising flour
1 table spoon oil
1/4 cup cornflour
1 cup water `
Salt and pepper


To make batter
1. Sieve the flours, salt and pepper into a bowl, make a well in the centre
2. Combine oil, water gradually whisk into flour until smooth batter formed
3. Dry prepared seafood on paper towel. Dip in flour shaking off excess
4. Heat oil in deep pan until moderately hot, coat few fillets at a time with batter
5. Gently lower in hot oil and cook 2-3 minutes or until golden brown and crisp
6. Drain cooked seafood on paper towel, keep warm, while cooking remainder
7. Serve with lemon wedges and tartar sauce
