Ingredients

350g cooked crab meat
500ml fish stock
2 tablespoons cornflour
2 egg whites
2/3cup green shallots finely sliced
270g can corn kernels drained
Salt and pepper to taste

Instructions

1. Combine corn, crabmeat, fish stock, and 2 cups of water in a large saucepan
2. Blend cornflour with 2 tablespoons of water to form a smooth paste
3. Add to saucepan stirring constantly until mixture comes to the boil
4. Reduce heat to a gentle simmer
5. Lightly beat egg whites with 2 tablespoons of water
6. Add to soup in a thin steady stream stirring constantly
7. Stir in shallots cook until they turn bright green
8. Remove from heat and season to taste
