4 Green blue swimmer crabs
4 garlic cloves finely chopped
1 medium onion finely chopped
1-3 fresh red chilli finely chopped (optional)
400g can diced tomatoes
1 cup white wine
2 tablespoons chopped parsley
3 tablespoons lemon juice
3 tablespoons olive oil
Salt and pepper


1. Prepare crabs by removing hard shell, soft internal organs and feathery gills
2. Using a heavy knife cut bodies into quarters
3. Heat oil in a large pan
4. Add onion, garlic and chilli cook 2-3 minutes on medium heat
5. Add wine, tomatoes and crab mix together
6. Cover with lid or foil simmer 8-10 minutes
5. Mix occasionally until crab is just cooked
6. Add parsley, lemon, salt and pepper mix through
7. Serve with salad and bread
