2 tablespoons salt reduced soy sauce
1 tablespoon mirin
1 tablespoon lime juice
2 coriander roots trimmed washed finely chopped
1 teaspoon freshly grated ginger
1 long red chilli seeded finely chopped
4 x 150g Blue Eye Cod portions skinned removed
150g dried egg noodles
150g snow peas trimmed thinly sliced lengthways
2 tablespoons chopped coriander plus leaves to serve


1. Combine soy, mirin, lime juice, coriander roots, ginger and chilli. Set aside
2. Line a steamer basket with baking paper
3. Half fill wok or saucepan with water
4. Make sure steamer basket is not touching water and bring to the boil
5. Arrange fish steamer basket cover
6. Steam 6-7 minutes or until fish is just cooked should flake easily with a fork
7. Cook noodles in a saucepan boiling water to packet directions until al dente
8. Adding snow peas for the last 30 seconds of cooking time
9. Drain noodles and peas, toss with half reserved soy dressing and coriander
10. Divide noodles between serving plates
11. Top with fish drizzle with remaining dressing
12. Garnish with coriander leaves
