4 Green Blue Swimmer crabs
4 garlic cloves finely chopped
1 piece of ginger peeled and sliced
1 red capsicum deseeded and cut into strips
4 shallots cut into 3cm pieces
4 tablespoons freshly ground black pepper
2 tablespoons oyster sauce
1 tablespoon soy sauce
2 tablespoons sugar
1/2cup water
3 tablespoons vegetable oil
Coriander leaves


1. Prepare crabs removing hard top shell, soft internal organs and feathery gills
2. Using a heavy knife cut bodies into quarters
3. Heat oil in a pan or wok
4. Add crabs and stir fry for 3-4 minutes, add garlic and ginger
5. Continue to stir fry 1-2 minutes
6. Add capsicum, shallots, black pepper, sauces, sugar and water mix well
7. Cover with foil or lid simmer 5-8 minutes
8. Mix occasionally until crab is cooked
9. Garnish with coriander leaves and serve with rice
