2 tablespoons basil pesto
4 Blue Eye cutlets
125g cherry tomatoes halved
1 small red onion finely chopped
1 tablespoon white wine
Boiled chat potatoes and lemon wedges to serve
Chopped parsley to garnish


1. Spread pesto evenly over fish
2. Place fish, tomatoes, onion and wine in a microwave safe dish
3. Season to taste
4. Cover with plastic wrap
5. Microwave on high for 5 minutes or until fish is cooked through
6. Serve with potatoes, lemon wedges and sprinkle with parsley
