500g frozen peas
4 x 200g Hapuka fillets
2 tablespoons olive oil
Deep fried shallots and lemon wedges, to serve
Saffron vanilla sauce
125ml fish stock
1/2 teaspoon saffron threads
1 vanilla bean, split, seeds scraped
80ml thickened cream
150g unsalted butter cut into cubes


To make sauce
1. Place fish stock, saffron and vanillas seeds in a saucepan over medium heat
2. Simmer until reduced to about 2 tablespoons
3. Whisk in cream and bring to a simmer
4. Whisk in butter a cube at a time. Strain
1. Season fish all over. Heat oil in a large fry pan over high heat
2. Cook fish, holding down with a spatula to keep flat 2 minutes
3. Turn cook for a further 1-2 minutes or until just cooked through
4. Exact cooking time will depend on thickness of fillets
5. Serve with sauce, lemon wedges parsnip puree and peas
6. Garnish with deep fried leeks
