4 mackerel fillets
1/4 cup soy sauce
1/4 cup mirin (Japanese sweet wine)
1 tablespoon white sugar
1/2 tablespoon grated fresh ginger root


1. Rinse fillets, and pat dry with paper towel
2. In a medium bowl, mix together soy sauce, mirin, sugar and ginger
3. Place fillets into marinade, let stand at least 20 minutes
4. Preheat an outdoor grill for high heat
5. Grill fillets, basting occasionally
6. Grill until fish flakes easily with a fork, about 5 to 8 minutes
7. Serve with lemon slices or long white radish slice as a garnish
